The Tradition Behind the Uniform

The modern chef's uniform was standardized by the legendary French chef Marie-Antoine Carême in the 19th century and refined by Auguste Escoffier. Each element serves both practical and symbolic purposes.

The double-breasted design allows chefs to reverse the jacket to hide stains during service. White fabric was chosen to signify cleanliness and help chefs stay cool in hot kitchens. The thick cotton provides protection from steam, heat, and hot liquids.

Traditionally, the number of buttons indicated rank: 100 buttons for an Executive Chef, fewer for lower ranks - though this is rarely followed today.

The tall chef's hat, or toque blanche, traditionally had 100 pleats representing the 100 ways a master chef could prepare eggs. The height indicated the chef's rank in the kitchen hierarchy.
